Only Lettuce Entertain You could turn a multimillion-dollar buildout (the former three Michelin star L2O) into a kind of permanent pop up space, in which guest chefs from around the country spend a three-month stint in the kitchen (usually previewing the food of the place they plan to open back home). The concept has evolved since opening, with guest chef Stephen Gillanders (of Jean-Georges Vongerichten's organization) taking over as permanent executive chef and offering a standard menu of a la carte dishes, while the guest chefs get the high-flying solo numbers with additional dishes and a tasting menu.
